Burundi Kayanza Bwayi No. 7 – Tasting

Nearly 50 hours given to the roast to rest. This brew has a nice sweetness to it, but not that same earthy kind of almost sour taste that you get when it is roasted under the recommendation. Perhaps it's the same thing, but the particular bean just does better with that taste than some others. It's fascinating to begin to notice these differences.
